Happy Spring 2018 everyone! On this week, I am sharing with you another healthy gluten free muffin recipe. I made these super-moist chocolate muffins for the Easter weekend. This recipe is one of my favourites since I started baking. They are great for breakfast, snacks or as a dessert.
I love coconut and chocolate. I try eating a small piece of dark chocolate everyday. This recipe combines chocolate and coconut with all the goodness of these two super foods in a healthy dessert.
It was the late 90’s when I started making this great and delicious Cuban dessert. My husband has fond memories of this dish from his school years.

Flan de leche is a custard dessert with a layer of soft caramel on top. A legacy of the Spanish, this dessert is very popular not only in the Philippines and Cuba, but throughout the world. It’s also known as leche flan, creme caramel, caramel pudding, custard pudding and many other names.
Tiramisu means “cheer me up” or “make me smile” in Italian. I only make this dessert on special occasions, like Christmas or New Year’s. This is my husband’s favourite dessert and true to its meaning in Italian, it always puts a smile on his face!
