Hot Tomato Salad

Ingredients
  • 2 lbs. fresh tomatoes, chopped
  • 4 medium size onions, chopped
  • 5 shallots, chopped
  • 3 tbsp. olive oil
  • 1.5 tsp. salt
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • ¼ cup fresh basil, chopped
  • Extra fresh basil for garnishing
Instructions
  1. Chop tomatoes, onions, shallots and fresh basil.
  2. In a large skillet, heat the oil. Add the onions and shallots, cook until translucent or 3 to 5 minutes.
  3. Add the salt, dried basil and dried oregano, stir and cook for 1 minute.
  4. Add the tomatoes, cook in medium heat for 5 minutes.
  5. Transfer to a serving bowl and garnish with fresh basil.
