This Spanish dish is everyone’s favorite in our family. It’s very tasty and the chicken is tender and juicy. The salty taste of the olives nicely complements the sweeter taste of the dried apricots.
I learned this recipe from my good friend Susan. She taught me how to cook a variety of authentic Greek dishes and I taught her how to cook some typical Asian food. Susan and I would spend hours in the kitchen, experimenting and trying to come up with “healthier” versions of typical dishes from different cultures.
