Dates are rich in dietary fiber, great sources of vitamin A and potassium, high in antioxidants such as beta carotene, and rich in minerals like calcium and manganese.

Dates are all year round available in the supermarkets, or at least they are here in Ontario. I used a date paste package for this recipe which is excellent for baking and also a great time saver. You could also make the paste yourself, if you cannot find it in your grocery store. To make the paste, soak the dates in water overnight, puree them on a blender or food processor adding a bit of water until the mix turn creamy.

Ingredients
  • ½ cup coconut oil
  • ¼ cup brown sugar, adjust according to your taste
  • 4 eggs
  • 2 cups of coconut flour
  • 1 cup of shredded coconut
  • 2 tsp. baking soda
  • 2 tsp. salt
  • 2 tsp. ground cinnamon
  • 2 tsp. nutmeg
  • 2 tsp. vanilla extract, optional
  • 6 small bananas or 4 mediums, mashed or crushed
  • 1 lb. date paste package, cut into thin slices
For the topping:
  • ½ cup shredded coconut
  • 1 tsp. ground cinnamon
  • 1 tsp. nutmeg
Instructions
  1. Move oven rack to the middle position. Heat oven to 350F.
  2. Mix coconut oil, brown sugar and eggs in a large mixing bowl, food processor or stand mixer if you've one available. Stir in until the mix is well blended.
  3. Add the mashed bananas and vanilla extract, beat until smooth.
  4. Stir in coconut flour, shredded coconut, baking soda and salt just until the mix looks moistened.
  5. Use a 9x13 inch baking dish or pan, spray with non-stick cooking oil.
  6. Put ½ of the mixed batter into the baking dish, press the edges into the corners to cover the bottom.
  7. Arrange the sliced date paste over the batter.
  8. Put the other ½ mixed butter on top, making sure the dates are covered.
  9. Sprinkle with the topping.
  10. Bake for about an hour or until lightly browned on top.
  11. Let cool for 10-15 minutes. Cut into squares or according to your preference
